Cake in a mug (recipe)

Yesterday my 366 was a picture of cake in a mug that I made for me and my parents. I had some people ask about the recipe, so here it is!

These are super easy to make, and takes about 5 minutes at the most. And, they are delicious. But the best part: it makes two, perfectly portioned pieces of cake. I generally am just cooking for myself so making a whole cake is ridiculous. I usually top them with chocolate syrup and sometimes with a scoop of ice cream; they make for a deliciously rich dessert.

Ingredients:
5 tbs all-purpose flour
5 tbs granulated sugar
2 tbs cocoa powder
a pinch of salt
1/4 tsp baking powder
1 large egg
4 tbs milk
1 tbs melted butter
4 tbs vegetable oil
1/4 tsp vanilla extract
2 microwave safe mugs

Mix the dry ingredients in one of the microwave safe mugs. In a small bowl lightly beat the egg and add in the other wet ingredients, mixing well. Add in the dry mixture, and mix well until fully combined. Pour half the batter in each mug. One at a time, microwave the mugs on high for around a minute. The cake will still look gooey on top, but if you don’t think it is quite done put it back in the microwave for 15 seconds or so. Let cool for a bit, and dig in!

 

337/365 – Crock-pot Dinner

**Sunday, December 12

Sunday was such an excellent day. Slept in, lounged around, and spent time with Elliot. In the afternoon we decided to use his crock-pot for the first time, and man was it delicious. I was so appreciative of a lazy day that I didn’t even think of taking a picture until dinner, which was late and I was still just wanting to chill out and relax. Which is why this picture is pretty lame, but it was just too good not to show off.

269/365 – SmashBurger

I think this is the earliest I have ever posted my 365! I went to lunch at SmashBurger with Elliot today. We had never been there before, so it was a nice little change. And man, their fries were by far the best I have ever had. They were seasoned with rosemary, olive oil, garlic, and sea salt; delicious I tell you. Plus it is beautiful out and we got to eat outside, making it all even better.

254/365 – Strawberries and Pumpkin

Yum. My parents discovered this pumpkin pancake mix, and have sent me a few boxes, and I must say I love it. It is so delicious. Well Whitney and I made some the other day and had tons of left overs, so this afternoon after class I thought I would treat myself to a nice breakfast (well, lunch really). I had bought strawberries yesterday, and cut up a ton of them to put on my pumpkin pancakes. It was incredible.

226/365 – Jones Soda

I am not much of a soda drinker (yes, I am a northerner and I say “soda”), but I absolutely love Jones Soda, and every once in a while (like once a year) I buy some. I bought some last night, and while I was driving this evening I got the image of the bottle on Elliot’s deck railing. I drove home from dropping off some photographs for a contest, grabbed my camera, and raced the setting sun to Elliot’s apartment so I could get me shot.

177/365 – Biscuits

Still catching up, this one is from Monday (7-5).

Both Elliot and I had Monday off from school and work, and so we had time to actually make a good dinner. We grilled steak and salmon, and had some veggies and biscuits, it was delicious. And such a nice treat since we never get to make a good dinner together.
